Description

Dumpling Bake is a delicious one-pan meal featuring frozen veggie dumplings baked in a flavorful red curry coconut broth with fresh vegetables. This viral recipe combines an easy cooking method with vibrant flavors and a comforting texture, perfect served over white jasmine rice or noodles for a satisfying dinner.

Ingredients

Scale

Red Curry Broth

  • 1 can (13.5 fl oz / 400 ml) coconut milk
  • 3 tablespoons red curry paste
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 large garlic clove, grated
  • 1 small cube of ginger, grated

Dumpling Bake

  • 20 frozen veggie dumplings
  • 2 bok choy bulbs, chopped
  • 1 zucchini, sliced
  • Garnish: sesame seeds, sliced green onions, cilantro/coriander, chilli crisp oil
  • To serve: white jasmine rice or noodles

Instructions

  1. Prepare the Broth: In a large 12 x 8 inch (30 x 20 cm) baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil until smooth with no lumps. Grate in the garlic and ginger and stir to combine. Optionally, add ¼ cup of water for a more brothy consistency if serving with rice or noodles.
  2. Add Vegetables: Chop the bok choy and slice the zucchini, then add them to the baking dish. Stir gently so the vegetables are coated with the curry broth.
  3. Arrange Dumplings: Place frozen dumplings on top of the vegetables in a single layer, ensuring they do not overlap. Slightly press them into the broth so they are partially submerged but with the tops visible. Spoon some broth over the dumplings to keep them moist.
  4. Bake Covered: Cover the baking dish tightly with aluminum foil and bake in a preheated oven at 400°F (200°C) for 20 minutes. This allows the dumplings to steam and absorb the flavors.
  5. Bake Uncovered: Remove the foil and continue baking for another 10 minutes until the broth is bubbly and the tops of the dumplings develop a slight crisp.
  6. Garnish and Serve: Remove from oven and add garnish such as sesame seeds, sliced green onions, cilantro, or chili crisp oil. Serve hot over a bed of white jasmine rice or noodles and enjoy your comforting Dumpling Bake.

Notes

  • Use veggie dumplings or any preferred frozen dumplings; adjust quantity to fit your baking dish.
  • Add water to the broth if you prefer a soupier consistency, especially when serving with rice or noodles.
  • Customize vegetables based on what you have available; bell peppers or mushrooms work well.
  • For extra heat, increase the amount of red curry paste or add chili crisp oil as garnish.
  • Covering with foil during the initial bake helps steam the dumplings, ensuring they cook through while keeping them soft.
  • Remove the foil towards the end to allow tops to crisp slightly for texture contrast.
