Instructions
- Melt Velveeta and Butter. In a medium saucepan over medium heat, add the diced Velveeta and salted butter. Stir frequently to ensure the mixture melts evenly without burning.
- Add Chocolate and Vanilla. Once the Velveeta and butter are fully melted, add the semi-sweet chocolate chips. Stir continuously until the chocolate is melted and fully incorporated into the mixture. Then, stir in the vanilla extract.
- Add Powdered Sugar. Lower the heat to low. Gradually add the powdered sugar in increments, stirring well after each addition to create a smooth, thick fudge mixture.
- Mix in Pecans. Turn off the heat and fold in the chopped pecans if using. Mix them evenly throughout the fudge mixture.
- Set the Fudge. Pour the fudge into a prepared baking dish and quickly spread it evenly. Refrigerate for at least 4 hours or overnight to allow it to set properly.
- Cut and Serve. Once set, cut the fudge into 48 small pieces and serve.
