Description

This Valentine’s Day Skillet Cookie is a warm, gooey dessert perfect for sharing. Made with a buttery dough loaded with mini semi-sweet chocolate chips and festive M&Ms, it’s baked right in a cast iron skillet for a perfectly soft center and slightly crisp edges. Ideal for a cozy treat or special occasion dessert.

Ingredients

Scale

Cookie Dough

  • 1 cup butter softened (2 sticks)
  • 3/4 cup white granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon table salt
  • 12 oz mini semi-sweet chocolate chips
  • 1 package holiday M&Ms or Peanut Butter M&Ms divided (approximately 10 oz)

Instructions

  1. Preheat and prepare skillet: Preheat your oven to 325 degrees Fahrenheit and grease a 12-inch cast iron skillet thoroughly with butter to prevent sticking.
  2. Cream butter and sugars: In a large mixing bowl, use a fork or hand mixer to cream together the softened butter, white granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs and vanilla extract until fully incorporated and the mixture is smooth.
  4. Combine dry ingredients: Stir in the unbleached flour, baking soda, and salt until just combined, being careful not to overmix.
  5. Mix in chocolate chips and M&Ms: Fold in the mini semi-sweet chocolate chips and half of the holiday or peanut butter M&Ms, reserving the rest to top later.
  6. Press dough into skillet: Press the cookie dough evenly into the prepared skillet, smoothing the top as needed.
  7. Bake initial phase: Bake in the preheated oven for 25 minutes until the edges start to brown slightly.
  8. Add remaining M&Ms and finish baking: Remove skillet from oven, sprinkle the reserved M&Ms on top and gently press them into the cookie dough. Return to oven and bake for an additional 8 minutes or until the center is set but still soft.
  9. Cool and serve: Remove from oven and allow the skillet cookie to cool in the skillet for 30 to 45 minutes to fully set the center. Serve warm with ice cream for a gooey treat.

Notes

  • Using a 12-inch cast iron skillet ensures even baking and the signature crispy edges.
  • Softened butter is key to properly creaming with sugars and achieving a tender crumb.
  • The cookie is best enjoyed warm, straight from the skillet, optionally topped with vanilla ice cream.
  • You can substitute holiday M&Ms with any candy-coated chocolates or skip them for a classic chocolate chip cookie.
  • Letting the cookie cool fully sets the center to prevent it from being too gooey and falling apart when sliced.
