Description

A hearty and flavorful Sloppy Joe Bowl featuring roasted sweet potatoes and a savory ground beef sloppy joe mixture, topped with pickles and red onions for a delicious twist on a classic comfort food.

Ingredients

Scale

Roasted Sweet Potatoes

  • 2 medium sweet potatoes cut into 1/2 inch cubes (about 3 cups)
  • 2 tablespoons avocado oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Sloppy Joe Meat

  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 8 ounces tomato sauce
  • 1/2 cup ketchup
  • 1 tablespoon honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon dried mustard
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Other Ingredients

  • Dill pickle slices
  • Sliced red onion

Instructions

  1. Preheat and prepare sweet potatoes. Preheat oven to 425° F and line a baking sheet with foil or parchment paper. Place sweet potato cubes on the baking sheet. Drizzle with avocado oil, chili powder, garlic powder, salt, and pepper. Toss with your hands to coat evenly.
  2. Roast sweet potatoes. Roast the sweet potatoes for 30 minutes or until tender, tossing halfway through the cooking time for even browning.
  3. Cook the sloppy joe meat. While sweet potatoes roast, heat a large skillet over medium-high heat. Drizzle a little oil in the skillet, then add ground beef and diced onion. Crumble and cook the beef until browned and onions are tender.
  4. Add spices and sauce. Stir in chili powder, dried mustard, celery seed, garlic powder, salt, and pepper. Pour in tomato sauce, ketchup, Worcestershire sauce, and honey. Stir well to combine.
  5. Simmer the mixture. Reduce heat to medium-low and let the sloppy joe mixture simmer for 15 minutes, stirring occasionally, until the sauce thickens.
  6. Assemble the bowls. Divide the roasted sweet potatoes and sloppy joe meat evenly among serving bowls. Top with dill pickle slices and sliced red onions or your preferred toppings.
  7. Serve immediately. Enjoy the Sloppy Joe Bowls warm for a comforting and satisfying meal.

Notes

  • Use lean ground beef to reduce fat content and prevent excess grease.
  • Sweet potatoes can be roasted ahead of time and reheated before serving.
  • Feel free to substitute ground turkey or plant-based beef for a different protein option.
  • Adjust the level of chili powder to make the dish more or less spicy according to your taste.
  • Pickles and red onions add a nice contrast of flavor and texture but can be omitted or replaced with other toppings like shredded cheese or avocado.
