Burger Sauce
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon pickle relish
Burgers
- 20 to 24 ounces ground beef (90/10)
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 teaspoon garlic powder (optional)
- 2 teaspoons extra virgin olive oil
- 4 to 8 slices American cheese
- 4 hamburger buns
- Fresh lettuce leaves
- Slices of tomato
- Slices of red onion
Instructions
- Make the burger sauce: Stir together the mayonnaise, ketchup, and pickle relish in a small bowl. Adjust the flavors by adding more ketchup or relish if desired, then set aside.
- Form the burger patties: Divide the ground beef into eight 3-ounce loose balls for double-stacked burgers. Sprinkle kosher salt, black pepper, and garlic powder evenly on the outside of each ball, being gentle to keep the beef loose.
- Press the patties: Heat a skillet over medium-high heat and add the olive oil. Place each beef ball in the skillet and cover with a piece of foil. Use a second small pan or skillet to press down each ball into a very thin, even patty. Repeat for all patties reusing the foil.
- Cook the patties: Cook the patties for 2 minutes without moving them. Flip each patty and immediately top with cheese slices. Cook for an additional 2 to 3 minutes until the cheese is melted and the patties are cooked through. Lightly press on the patties with a spatula if needed to reshape gently, preserving juices.
- Assemble the burgers: Spread 1 to 2 tablespoons of burger sauce on the bottom half of each bun. Layer with fresh lettuce, one or two cheese-topped patties, sliced tomato, and red onion. Top with the bun and serve immediately while warm.
