Instructions

  1. Slice the zucchini: Using a mandoline slicer, carefully cut the zucchini into thin ribbons approximately 1/8 inch thick. Bend a slice to ensure it's thin enough and flexible for skewering.
  2. Preheat the grill: Set your grill to high heat, around 450° to 500° Fahrenheit, to prepare for grilling.
  3. Prepare zucchini ribbons: Lay the zucchini slices out flat on a baking sheet. Lightly brush both sides with olive oil and sprinkle generously with tajín seasoning. Repeat seasoning on the second side.
  4. Skewer the zucchini: Weave and fold the thin zucchini ribbons carefully onto bamboo or stainless steel skewers, ensuring even distribution and firmness.
  5. Grill the skewers: Place the zucchini skewers on the preheated grill. Cook for about 10 minutes, turning 2-3 times to achieve even grilling with lovely charred marks and caramelization.
