Ingredients
Scale
Vegetables
- 2 zucchini, sliced thin - approximately 1/8 inch thick
Seasoning
- ¼ cup tajín, more or less to taste - or homemade tajín
Oil
- ¼ cup olive oil for brushing, plus extra if needed
Instructions
- Slice the zucchini: Using a mandoline slicer, carefully cut the zucchini into thin ribbons approximately 1/8 inch thick. Bend a slice to ensure it's thin enough and flexible for skewering.
- Preheat the grill: Set your grill to high heat, around 450° to 500° Fahrenheit, to prepare for grilling.
- Prepare zucchini ribbons: Lay the zucchini slices out flat on a baking sheet. Lightly brush both sides with olive oil and sprinkle generously with tajín seasoning. Repeat seasoning on the second side.
- Skewer the zucchini: Weave and fold the thin zucchini ribbons carefully onto bamboo or stainless steel skewers, ensuring even distribution and firmness.
- Grill the skewers: Place the zucchini skewers on the preheated grill. Cook for about 10 minutes, turning 2-3 times to achieve even grilling with lovely charred marks and caramelization.
Notes
- Use a mandoline slicer for evenly thin zucchini ribbons for best grilling results.
- If tajín is unavailable, substitute with a blend of chili powder, lime zest, and salt.
- Brush zucchini lightly with olive oil to prevent sticking and enhance caramelization.
- Turn skewers gently to avoid breaking the delicate zucchini ribbons.
- Serve immediately for best flavor and texture.
