  • 2 oz tequila
  • 1 oz dill pickle brine
  • 1 oz Cointreau
  • 1/2 oz lime juice
  • 1 tbsp hot honey (use to taste)
  • Sparkling water, to top
  • Mini dill pickles, to garnish

For the Rim

  • Tajin, for the rim
  • Honey, to brush the rim

For the Hot Honey (Optional)

  • 1/2 cup honey
  • 1/4 cup hot sauce (such as Frank’s)
  • 1 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp red pepper flakes


Instructions

  1. Prepare the Glass Rim: Brush the rim of your cocktail glass with honey. Pour 1 to 2 tablespoons of Tajin onto a shallow plate. Dip and roll the honey-coated rim into the Tajin, then shake off any excess seasoning.
  2. Mix the Cocktail: In a cocktail shaker, combine the tequila, dill pickle brine, Cointreau, lime juice, and hot honey. Add ice to fill the shaker and shake vigorously until the mixture is well chilled.
  3. Serve: Strain the cocktail into the prepared glass. Top off with sparkling water to add a refreshing fizz. Garnish the drink with mini dill pickles for an extra tangy touch.
  4. Make Hot Honey (Optional): In a small saucepan over low heat, combine honey, hot sauce, cayenne pepper, garlic powder, onion powder, and red pepper flakes. Stir and heat for 1 to 2 minutes until the spices dissolve completely. Let cool and store in an airtight container up to 2 weeks at room temperature or longer refrigerated.

  • Adjust the amount of hot honey to taste if you prefer a sweeter or spicier cocktail.
  • For the spicy rim, Tajin is ideal, but you can substitute with chili powder and salt if unavailable.
