Instructions
- Prepare the slow cooker: Spray the slow cooker insert with non-stick cooking spray to prevent sticking. Place the 4 boneless skinless chicken breasts evenly in the bottom of the slow cooker.
- Make the sauce: In a small bowl, whisk together ½ cup soy sauce, ½ cup honey, ¼ cup rice wine vinegar, ¼ cup chopped onion, 2 teaspoons minced garlic, ¼ teaspoon pepper, and ¾ teaspoon ground ginger until combined.
- Cook the chicken: Pour the prepared sauce evenly over the chicken breasts in the slow cooker. Cover with the slow cooker lid and cook on HIGH for 4 hours. The chicken should become tender and fully cooked.
- Shred the chicken: Once cooked, carefully remove the chicken breasts from the slow cooker using a slotted spoon. Place on a plate or cutting board and shred the chicken using two forks.
- Thicken the sauce: Pour the sauce mixture remaining in the slow cooker into a medium saucepan. In a small bowl, whisk together ¼ cup water and 3 tablespoons cornstarch until smooth. Slowly whisk this cornstarch mixture into the sauce in the saucepan. Heat over medium-high heat, whisking constantly, and bring to a boil. Continue boiling and whisking until the sauce thickens, about 2 minutes.
- Combine and serve: Return the shredded chicken to the slow cooker and pour the thickened sauce over it. Stir gently to coat the chicken well. Serve the honey teriyaki chicken hot over steamed rice and garnish with sliced green onions and sesame seeds if desired.
