A refreshing Honey Ginger Lemonade made with homemade honey ginger simple syrup and freshly squeezed lemon juice, perfect for a cooling and flavorful drink.

Honey Ginger Simple Syrup
- 1/3 cup honey
- 1 cup water
- 1 medium piece fresh ginger, peeled and sliced
Lemonade
- 1 1/2 cups freshly squeezed lemon juice (preferably Meyer lemons)
- 4 cups water
- Fresh mint leaves
Instructions
- Make the simple syrup: In a small pot or tea kettle, bring 1 cup of water to a boil. Once boiling, turn off the heat and add honey and sliced ginger. Let it steep for 20 minutes to infuse the flavors.
- Prepare the lemonade base: While the syrup is steeping, juice the lemons and pour the juice into a large pitcher. Add 4 cups of water and ice to the lemon juice and stir well.
- Combine and serve: Strain out the ginger slices from the honey ginger syrup and pour the syrup into the pitcher with the lemon mixture. Stir thoroughly to combine all the flavors. Add fresh mint leaves for garnish. Refrigerate or serve immediately over ice.
Notes
- For a spicier kick, leave ginger slices in the syrup longer before straining.
- Use Meyer lemons if available for a sweeter, less tart lemonade.
- Adjust honey quantity for desired sweetness.
- The syrup can be stored in the refrigerator for up to one week.
- Fresh mint leaves add a bright, refreshing aroma and flavor.
