Instructions

  1. Preheat the grill: Preheat your grill to medium heat to prepare for grilling the sausages and vegetables.
  2. Prep the veggies: In a medium bowl, toss the thinly sliced red and yellow bell peppers and yellow onion with the olive oil, ½ teaspoon salt, and ½ teaspoon ground black pepper. Set aside.
  3. Grill the sausage: Place the sausages directly on the grill grates and cook for 7 minutes per side, or until thoroughly cooked. Once done, transfer the sausages to a plate and tent with foil to keep warm or keep on a rack over indirect heat on the grill.
  4. Grill the veggies: While the sausages are cooking, place the prepared vegetables in a grill basket over medium heat. Grill for about 10 minutes, tossing occasionally, until softened and lightly charred.
  5. Assemble the rolls: Place one grilled sausage inside each bun or roll. Top with the grilled peppers and onions, spoon 2 tablespoons of marinara sauce over each, and sprinkle with shredded mozzarella cheese.
