Description

This Easy Bruschetta Chicken recipe features tender, seasoned chicken breasts grilled to perfection, topped with a fresh and vibrant tomato basil mixture, mozzarella cheese, and a drizzle of balsamic glaze for an irresistible burst of flavor.

Ingredients

Units Scale

Tomato Basil Topping

  • 2 cups diced Roma tomatoes (260g, about 5-6 tomatoes)
  • 1 head garlic (minced)
  • 1 1/2 tablespoon olive oil
  • 1 1/2 tablespoon balsamic vinegar
  • 5 tablespoons fresh chopped basil (9g)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices mozzarella cheese
  • 4-5 tablespoons balsamic glaze

Instructions

  1. Prepare the Tomato Basil Topping: In a medium-sized bowl, combine the diced tomatoes, minced garlic, olive oil, balsamic vinegar, chopped fresh basil, salt, and black pepper. Stir well and set aside to let the flavors meld.
  2. Prep the Chicken: Pound the chicken breasts to even thickness if desired for uniform cooking, or leave them whole. Coat each chicken breast evenly with olive oil.
  3. Season the Chicken: In a small bowl, mix together the Italian seasoning, garlic powder, salt, and black pepper. Rub this seasoning blend evenly over the oiled chicken breasts to coat thoroughly.
  4. Grill the Chicken: Heat your grill to high heat. Grill each chicken breast for 8 minutes per side or until the internal temperature reaches 165°F (74°C) and the meat is cooked through.
  5. Add Cheese: Once the chicken is fully cooked, place a slice of mozzarella cheese on top of each breast. Close the grill lid or cover and allow the cheese to melt, about 1-2 minutes.
  6. Rest and Serve: Remove the chicken from the grill and let it rest for 5 minutes to retain juices. Spoon the prepared tomato basil topping over each piece and finish with a drizzle of balsamic glaze. Serve immediately.

Notes

  • For consistent cooking, pounding chicken breasts to an even thickness is recommended but optional.
  • Fresh basil is key to authentic flavor; if unavailable, substitute with 1 tablespoon dried basil but expect a milder taste.
  • Balsamic glaze can be store-bought or homemade by reducing balsamic vinegar until syrupy.
  • If a grill is not available, the chicken can be cooked in a stovetop grill pan or baked in the oven at 375°F for about 25 minutes.
  • Resting chicken after grilling ensures juicier results and better flavor retention.
