  • 1 1/2 cups unsalted butter
  • 1 cup chopped celery

  • 2 1/4 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 1/2 tablespoons poultry seasoning
  • 1 1/2 cups chicken stock (low sodium preferred)
  • 2 large eggs


Instructions

  1. Preheat and Prepare: Preheat your oven to 350ºF (177ºC). Spray a 2-quart casserole dish or a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Sauté Vegetables: In a large skillet, melt the 1 1/2 cups of unsalted butter over medium-high heat. Add the chopped celery and diced yellow onion and sauté for 10-12 minutes until the vegetables are tender and fragrant.
  3. Combine Bread Cubes: Place the 13-15 cups of dry bread cubes into a large mixing bowl. This should be homemade dried bread cubes tightly packed for best absorption.
  4. Mix Ingredients: Pour the butter, onion, and celery mixture over the bread cubes. Add 2 1/4 teaspoons salt, 1 teaspoon ground black pepper, 1 1/2 tablespoons poultry seasoning, 1 1/2 cups chicken stock, and 2 large eggs to the bowl. Mix everything thoroughly until evenly combined.
  5. Transfer and Bake: Spread the stuffing evenly in the prepared baking dish. Bake in the preheated oven for 30-35 minutes until the top is golden brown and the stuffing is heated through.
  6. Garnish and Serve: Optionally, garnish with fresh parsley or other fresh herbs such as rosemary before serving warm.
