Cinnamon Chips

  • 6 6-inch flour tortillas
  • 1/4 cup sugar
  • 3/4 teaspoon cinnamon
  • 3 tablespoons butter, melted

Fruit Salsa

  • 2 1/2 tablespoons honey
  • 2 1/2 tablespoons fresh lemon juice
  • 2 1/2 tablespoons strawberry preserves or seedless raspberry preserves
  • 16 ounces strawberries, cut into 1/2-inch pieces
  • 2 mangos or 2 peeled peaches, cut into 1/2-inch pieces
  • 3 kiwi, cut into 1/2-inch pieces
  • 1/2 pint fresh blueberries


Instructions

  1. Prepare Cinnamon Chips: Preheat the oven to 400 degrees Fahrenheit. In a small bowl, combine the cinnamon and sugar; set aside. Lay the flour tortillas flat on a cookie sheet and brush each one evenly with the melted butter. Sprinkle the cinnamon-sugar mixture over the tortillas. Using a pizza cutter or knife, cut each tortilla into 6 triangle-shaped pieces by slicing it like a pie. Bake the pieces for 12 minutes or until crispy and golden. Remove from the oven and let cool.
  2. Make Fruit Salsa: In a small bowl, whisk together the honey, lemon juice, and preserves until well combined. In a large serving bowl, combine the chopped strawberries, mango or peaches, kiwi, and blueberries. Pour the honey mixture over the fruit and gently toss to coat evenly. Chill the fruit salsa until ready to serve for optimal flavor and freshness.
  3. Serve: Offer the chilled fruit salsa alongside the cinnamon chips. The salsa is best enjoyed within two to three hours of preparation for the freshest taste.
