  • 3 tablespoons butter divided
  • 8 ounces cremini mushrooms sliced fairly thin
  • 1 large clove garlic minced
  • 3/4 cup marsala wine
  • 1/2 cup heavy/whipping cream


Instructions

  1. Prepare the chicken: Cut the chicken breasts in half lengthwise to make 4 thinner cutlets. Season each piece with salt, pepper, and garlic powder. Coat each chicken piece evenly in flour for dredging.
  2. Sear the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When the pan is hot, add the chicken cutlets and sear them for 5 minutes on each side until they are golden brown. Remove the chicken from the skillet and set aside; it will finish cooking in the sauce.
  3. Cook the mushrooms: Add the remaining 2 tablespoons of butter to the skillet followed by the sliced mushrooms. Cook for 5 minutes, stirring occasionally, until the mushrooms are browned and tender.
  4. Add garlic and Marsala wine: Stir in the minced garlic and pour the marsala wine into the skillet. Let the mixture bubble and reduce for 3 minutes to concentrate the flavors.
  5. Finish the sauce and chicken: Pour the heavy cream into the skillet and return the chicken cutlets to the pan. Simmer for 5 minutes until the chicken is cooked through (internal temperature 165F) and the sauce has thickened slightly. Adjust seasoning with additional salt and pepper if desired. Optionally, garnish with chopped fresh parsley before serving.
