Description

A comforting and easy crockpot recipe featuring whole chicken cooked with vegetables and topped with flavorful stove top stuffing. Perfect for a hearty family meal with minimal prep and hands-off cooking.

Vegetables

  • 2 medium carrots diced
  • 1 small yellow onion diced
  • 2 medium celery ribs diced

Chicken

  • 5 pounds whole chicken

Seasoning & Stuffing

  • 1/2 cup salted butter melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon paprika
  • 6 ounces box stove top stuffing any flavor


Instructions

  1. Prepare the vegetables and chicken: Add the diced carrots, onion, and celery to the bottom of the slow cooker. Clean out the inside of the whole chicken and discard the innards. Place the chicken on top of the vegetables inside the slow cooker.
  2. Season the chicken: Pour the melted salted butter evenly over the chicken. Sprinkle poultry seasoning and paprika on top, rubbing it all over the chicken surface. Add salt and pepper if desired for additional taste.
  3. Cook the chicken: Cover the slow cooker with its lid and cook on high heat for 6 hours until the chicken is tender and fully cooked through.
  4. Prepare the stuffing: When done, carefully remove the chicken and place it on a platter covered with foil to keep warm. Drain all the liquid from the slow cooker, reserving 1.5 cups of the cooking liquid. Leave the cooked vegetables inside.
  5. Cook the stuffing: Add the box of stove top stuffing mix to the slow cooker along with the reserved cooking liquid. Stir to combine well, cover with lid, and cook on high for 10 minutes.
  6. Serve: Fluff the stuffing with a fork when finished. Slice the chicken however you prefer and serve with the stuffing, or place the chicken back in the slow cooker for a beautiful presentation. Enjoy your hearty crockpot chicken and stuffing meal!

  • You can season the chicken with salt and pepper according to your taste preference.
  • If you prefer a lower sodium option, choose a low sodium stove top stuffing or prepare your own homemade stuffing mix.
