Potatoes and Seasoning

Toppings and Garnishes
- 2 cups (226 g) shredded sharp cheddar cheese
- 8 slices thick-cut bacon, cooked and crumbled
- 1 large jalapeno pepper, seeded, diced for garnish
- 2 Roma tomatoes, diced for garnish
- ¼ cup sour cream, for garnish
- 1 medium shallot, diced for garnish
- 2 green onions, diced for garnish
Instructions
- Preheat Oven. Preheat your oven to 450°F and line two baking sheets with parchment paper to prepare for baking the potatoes evenly.
- Mix Seasonings. In a small bowl, combine the kosher salt, paprika, garlic powder, and black pepper to create a flavorful seasoning blend for the potatoes.
- Coat Potatoes. In a large bowl, add the sliced potatoes, olive oil, and seasoning mixture. Toss thoroughly to ensure the potato slices are evenly coated with oil and spices.
- Arrange and Bake Potatoes. Spread the seasoned potato slices in a single layer on the prepared baking sheets. Bake in the preheated oven for 20 minutes.
- Flip and Continue Baking. After 20 minutes, carefully flip the potato slices and return them to the oven for an additional 7 to 9 minutes, or until they turn golden brown and achieve a crispy texture.
- Combine and Top with Cheese and Bacon. Remove the baking sheets from the oven and combine all the potatoes onto one sheet. Evenly sprinkle shredded sharp cheddar cheese and crumbled bacon over the top.
- Melt Cheese. Return the potatoes to the oven for 3 to 4 minutes, allowing the cheese to melt thoroughly over the crispy potatoes.
- Add Garnishes and Serve. Remove from the oven and top with diced jalapeno, tomatoes, sour cream, shallots, and green onions. Serve immediately to enjoy warm and flavorful Irish Nachos.
Notes
- For air fryer instructions, season the potato rounds and place them in the air fryer basket (batch as needed depending on size).
