Description

Crispy Feta Fried Eggs combine the creamy, salty flavor of sautéed feta cheese with a perfectly cooked fried egg, served on a warm tortilla spread with smashed avocado and lemon juice. Garnished with pickled onions and a drizzle of chili oil, this quick and flavorful dish makes a delicious breakfast or light meal.

Ingredients

Scale

Main Ingredients

  • 1 large egg
  • ¾ oz / 20g feta cheese
  • 1 small tortilla or slice of toasted bread
  • ¼ avocado

Seasonings & Garnishes

  • Dried oregano
  • Red pepper flakes
  • Cooking oil spray or olive oil spray
  • Lemon juice
  • Pickled onions (for garnish)
  • Chili oil (for garnish)

Instructions

  1. Prepare the Pan: Spray a small fry pan or skillet lightly with cooking oil spray. Crumble the feta cheese evenly over the pan, making sure the edges of the pan are covered to create a crispy feta crust.
  2. Sauté the Feta: Heat the pan over medium heat and allow the feta to sizzle and sauté gently for about 2 minutes without burning, so the feta softens and browns nicely.
  3. Add the Egg: Crack the egg carefully into the center of the pan on top of the feta. Season with dried oregano and red pepper flakes to your taste.
  4. Cook the Egg: Allow the egg to cook until the white is set and the yolk reaches your preferred doneness—whether that’s runny or medium cooked.
  5. Prepare the Base: Warm the tortilla on a gas stove, in the oven, or microwave. Smash the avocado on top of the warm tortilla and add a squeeze of fresh lemon juice to brighten the flavor.
  6. Assemble and Serve: When the egg is cooked and the feta has formed a golden brown crust, gently slide the egg and feta mixture onto the avocado-covered tortilla using a spatula.
  7. Garnish and Enjoy: Top the assembled dish with pickled onions and drizzle with chili oil for an extra layer of flavor. Serve immediately and enjoy your crispy feta fried eggs.

Notes

  • Use a non-stick skillet to prevent the feta cheese from sticking and to help create a crisp crust.
  • If you prefer, substitute the tortilla with toasted bread for a different base texture.
  • Adjust the amount of red pepper flakes to control the heat level.
  • For extra creaminess, add a small dollop of Greek yogurt on the tortilla before the avocado.
  • Pickled onions and chili oil add vibrant flavor and can be omitted or substituted with fresh herbs or hot sauce based on preference.
  • Cook the egg on medium heat to avoid burning the feta while achieving the perfect egg texture.
