Ingredients
Scale
Main Ingredients
- 1 large egg
- ¾ oz / 20g feta cheese
- 1 small tortilla or slice of toasted bread
- ¼ avocado
Seasonings & Garnishes
- Dried oregano
- Red pepper flakes
- Cooking oil spray or olive oil spray
- Lemon juice
- Pickled onions (for garnish)
- Chili oil (for garnish)
Instructions
- Prepare the Pan: Spray a small fry pan or skillet lightly with cooking oil spray. Crumble the feta cheese evenly over the pan, making sure the edges of the pan are covered to create a crispy feta crust.
- Sauté the Feta: Heat the pan over medium heat and allow the feta to sizzle and sauté gently for about 2 minutes without burning, so the feta softens and browns nicely.
- Add the Egg: Crack the egg carefully into the center of the pan on top of the feta. Season with dried oregano and red pepper flakes to your taste.
- Cook the Egg: Allow the egg to cook until the white is set and the yolk reaches your preferred doneness—whether that’s runny or medium cooked.
- Prepare the Base: Warm the tortilla on a gas stove, in the oven, or microwave. Smash the avocado on top of the warm tortilla and add a squeeze of fresh lemon juice to brighten the flavor.
- Assemble and Serve: When the egg is cooked and the feta has formed a golden brown crust, gently slide the egg and feta mixture onto the avocado-covered tortilla using a spatula.
- Garnish and Enjoy: Top the assembled dish with pickled onions and drizzle with chili oil for an extra layer of flavor. Serve immediately and enjoy your crispy feta fried eggs.
Notes
- Use a non-stick skillet to prevent the feta cheese from sticking and to help create a crisp crust.
- If you prefer, substitute the tortilla with toasted bread for a different base texture.
- Adjust the amount of red pepper flakes to control the heat level.
- For extra creaminess, add a small dollop of Greek yogurt on the tortilla before the avocado.
- Pickled onions and chili oil add vibrant flavor and can be omitted or substituted with fresh herbs or hot sauce based on preference.
- Cook the egg on medium heat to avoid burning the feta while achieving the perfect egg texture.
