Description

This traditional Irish mashed potatoes recipe, known as Champ, features fluffy mashed potatoes infused with tender green onions and topped with melted butter. It's a comforting side dish that elevates your basic mash with rich flavors and a smooth, creamy texture, perfect for any meal.

  • 6 medium starchy potatoes, peeled and quartered

Milk and Onions

  • 1/4 cup (50 ml) whole milk
  • 6-8 green onions, green parts only, sliced

Butter and Seasoning

  • 1/2 cup (100 g) unsalted butter
  • Salt and white pepper to taste


Instructions

  1. Infuse the Milk: Add the sliced green onions to the milk and heat gently until it just begins to boil. Remove from heat and allow the onions to steep in the milk to impart their flavor.
  2. Cook the Potatoes: Boil the peeled and quartered potatoes in salted water until they are very tender, about 15 minutes. Drain the potatoes thoroughly and let them steam dry for 2 to 3 minutes to remove excess moisture.
  3. Mash and Combine: Pour the hot onion-infused milk over the cooked potatoes and mash thoroughly until smooth and creamy. Stir in the butter until melted and fully incorporated.
  4. Season: Add salt and white pepper to taste, adjusting seasoning as desired. Serve warm, topped with additional butter if preferred.

Notes

  • Use starchy or floury potatoes such as Yukon Gold or Russet for the best texture. In the UK, Maris Piper, King Edward, Vivaldi, or Desiree varieties work well.
  • For extra creaminess, you can substitute some of the milk with cream.
  • White pepper is recommended to avoid black specks in the mash, but black pepper can be used if preferred.
  • For a vegan variation, use plant-based butter and milk alternatives.
