Ingredients
Scale
Main Ingredients
- 1 lb. green beans, fresh, trimmed
- 1 ½ lbs. Yukon Gold potatoes, baby, cut in half
- 12 oz bacon, thick cut
- 4 tbsp butter
- 2 ½ tbsp ranch seasoning
- 1 tsp garlic powder
- salt and pepper, to taste
Instructions
- Cook the green beans: Bring a medium pot of water to a boil, add the green beans, and cook until bright green and tender, about 5 minutes. Remove with a slotted spoon and immediately place into a bowl of ice water to stop the cooking.
- Cook the potatoes: After removing the green beans, add the baby Yukon Gold potatoes to the boiling water and cook until fork tender, about 10 minutes. Drain carefully.
- Cook the bacon: While the vegetables cook, heat a large skillet over medium-high heat and cook the thick-cut bacon until browned and crispy. Remove the bacon with a slotted spoon and place on a paper towel-lined plate to drain. Set aside.
- Brown the potatoes: Add the drained potatoes to the skillet with the hot bacon drippings. Stir frequently to brown the potatoes evenly on all sides.
- Add seasonings and green beans: Reduce heat to medium, add butter, green beans, ranch seasoning, and garlic powder to the skillet. Stir well to coat all ingredients evenly.
- Combine with bacon and finish: Return the cooked bacon to the pan, season with salt and pepper to taste, mix everything thoroughly, and cook for an additional 1-2 minutes to warm through before serving.
Notes
- Use baby Yukon Gold potatoes for quicker cooking and a creamy texture.
- Ranch seasoning can be homemade or store-bought; adjust quantity to your taste preference.
- If you prefer less salt, reduce or omit the added salt since bacon and ranch seasoning contain salt.
- To make it gluten-free, ensure the ranch seasoning does not contain gluten ingredients.
- For a vegetarian version, omit the bacon and use olive oil or butter instead of bacon drippings.
- To save time, you can cook the green beans and potatoes simultaneously in separate pots.
