Description

Delight in these festive Christmas Tree Crepes topped with a luscious gingerbread spice whipped cream. Perfect for a holiday breakfast or brunch, these delicate sweet crepes are folded into tree shapes, layered with Nutella and fresh berries, creating a beautiful and delicious treat that captures the flavors of the season.

Ingredients

Scale

Sweet Crêpes

  • 2 cups all-purpose flour (250g)
  • 4 large eggs
  • 1 cup milk
  • 1 cup water
  • ½ teaspoon salt
  • 4 teaspoons granulated sugar
  • 4 Tablespoons salted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract (optional)

Gingerbread Spiced Whipped Cream

  • 1 cup heavy whipping cream
  • 2 Tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon almond extract
  • 1 teaspoon gingerbread spice

Instructions

  1. Prepare the Batter: In a large bowl, whisk together the flour and eggs until a large mass forms. Gradually add the milk and water about ¼ cup at a time, whisking thoroughly after each addition to create a smooth, lump-free batter. Stir in salt, sugar, melted butter, vanilla, and almond extract.
  2. Cook the Crêpes: Heat a lightly oiled crêpe pan or medium frying pan over medium-high heat. Pour ¼ cup of batter into the pan and swirl to spread evenly in a thin layer. Cook for 2 minutes until the bottom begins to brown and the surface turns matte, then flip and cook the other side for 1 minute. Transfer to a plate and repeat until all batter is used.
  3. Make the Whipped Cream: In a medium bowl, beat the heavy whipping cream on high speed until medium peaks form. Add powdered sugar, vanilla, almond extract, and gingerbread spice, then mix briefly to combine. Chill until ready to use.
  4. Assemble the Christmas Trees: Optionally drizzle each crepe with Nutella. Fold each crepe in half, then in quarters to make a quarter circle. Layer them on a plate slightly offset, gently lift each top flap and spoon gingerbread spiced whipped cream inside. Top with raspberries and blueberries, dust with powdered sugar, and serve.
  5. Serving Suggestions: Serve the crepes warm with Nutella, fresh bananas, strawberries, raspberries, blueberries, jams, or apple pie filling with sweetened whipped cream for a traditional presentation.

Notes

  • To make gingerbread spice, combine 2 tablespoons cinnamon, 2 tablespoons ground ginger, 2 teaspoons ground allspice, ½ teaspoon nutmeg, and ¼ teaspoon ground cloves. Store in an airtight container for up to 1 year.
  • If you prefer a smaller amount, use ½ teaspoon cinnamon and ground ginger, ¼ teaspoon allspice, a pinch of nutmeg (about 1/16 teaspoon), and a smidgen of ground cloves (about 1/32 teaspoon).
  • Use a non-stick pan or a dedicated crêpe pan for best results to prevent sticking.
  • Take your time whisking the batter slowly when adding liquids to ensure a smooth texture without lumps.
  • Folding the crepes carefully helps create the iconic Christmas tree shape and showcases the whipped cream filling.
