Ingredients
Scale
Cookie Dough
- 1/2 cup Unsalted Butter (softened)
- 1/2 cup Brown Sugar
- 1/2 cup Sugar
- 1/2 cup Creamy Peanut Butter (like Skippy's or Jif)
- 1 large Egg
- 2 teaspoons Vanilla Extract
- 3/4 cup Rolled Oats
- 1 cup Flour
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 3/4 cup Chocolate Chips
- 3/4 cup Red and Green Holiday M&M's (divided, 1/2 cup in dough and 1/4 cup for topping)
Instructions
- Cream Butter and Sugars: In a large mixing bowl, cream together softened butter, brown sugar, and sugar for 4 minutes until the mixture is light and fluffy.
- Add Wet Ingredients: Mix in the creamy peanut butter, egg, and vanilla extract, beating for 1 more minute to combine all ingredients thoroughly.
- Incorporate Dry Ingredients: Fold in rolled oats, flour, baking soda, and salt. Stir just until combined to avoid overmixing. Then gently fold in chocolate chips and 3/4 cup of the holiday M&M's, reserving 1/4 cup for decoration after baking.
- Chill Dough: Tightly wrap the dough and chill it in the refrigerator for 30 minutes to firm up and enhance flavor.
- Preheat Oven: Once chilled, preheat your oven to 365 degrees Fahrenheit for optimal baking temperature.
- Scoop Cookies: Scoop dough onto a light-colored baking sheet, spacing cookies at least two inches apart to allow for spreading during baking.
- Bake Cookies: Bake for 9-10 minutes or until the edges are set and the cookies are cooked through.
- Add Toppings and Cool: Remove from oven and immediately press the reserved 1/4 cup of M&M's lightly onto the tops of the warm cookies for festive color. Let cool on the baking sheet for 5-10 minutes before transferring to a wire rack or serving.

- Store cookies in an airtight container at room temperature; they remain fresh for up to 3 days.
