  • 2 tbsp honey
  • 1 tsp red wine vinegar
  • 1 tsp lemon juice
  • Salt and pepper, to taste
  • 50 ml olive oil


Instructions

  1. Make the dressing: Use a whisk to mix the Dijon mustard with honey, red wine vinegar, lemon juice, salt, and pepper until well combined.
  2. Emulsify the dressing: Slowly drizzle in the olive oil while continuously whisking to emulsify the mixture, creating a smooth dressing.
  3. Prepare salad base: Reserve a small portion of ingredients that are not leaves (such as cranberries, almonds, blue cheese, and apple cubes) for garnish.
  4. Mix salad: Combine the lettuce leaves, baby rocket, and the remaining salad ingredients in a large bowl. Pour half of the dressing over and toss gently to coat evenly.
  5. Assemble and serve: Finish the salad by topping it with the reserved ingredients and drizzle with the remaining dressing for added texture and flavor contrast.
