Ingredients
Scale
Vegetables
- 1 yellow onion, halved and thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
Chicken and Seasoning
- 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon smoked paprika
- Kosher salt and fresh ground black pepper to taste
Other
- 2 tablespoons olive oil, divided
- 1 cup shredded provolone cheese
Instructions
- Cook Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the sliced bell peppers, onion, and season with salt and pepper. Sauté the vegetables until very tender, then remove them from the skillet and set aside on a plate.
- Cook Chicken: Add the remaining 1 tablespoon of olive oil to the skillet. Place the thinly sliced chicken breast in the skillet along with Italian seasoning, smoked paprika, salt, and pepper. Spread the chicken out in a single layer and let it cook undisturbed for a couple of minutes to brown.
- Sauté Chicken: Continue cooking the chicken, stirring occasionally, until it is fully cooked through and browned nicely.
- Combine Ingredients: Return the sautéed onions and peppers along with any collected juices back into the skillet with the cooked chicken. Stir everything to combine evenly.
- Add Cheese and Melt: Sprinkle the shredded provolone cheese evenly over the mixture. Cover the skillet with a lid and cook until the cheese has melted completely.
- Serve: Remove from heat and serve the cheesy chicken cheesesteak skillet hot.
Notes
- Thinly slicing the chicken breasts ensures quick and even cooking.
- If you prefer, you can substitute provolone cheese with mozzarella or cheddar for a different flavor.
- Adjust the seasoning to taste; smoked paprika adds a nice smoky depth but can be omitted if unavailable.
- For a gluten free option, confirm that all seasonings and cheese are gluten free.
- Serve with crusty bread, rice, or over a bed of greens for a complete meal.
