Description

This Buffalo Chicken recipe features tender chicken breasts marinated in a flavorful buffalo sauce made with Frank’s hot sauce, honey, and spices, then cooked on the stovetop or grill. It's perfect for sandwiches, wraps, salads, or tacos and allows you to customize the heat with a delicious honey-lime glaze.

Ingredients

Scale

Chicken

  • 2-3 chicken breasts pounded thin (approx. 1 pound)
  • 3 tablespoons olive oil, divided

Buffalo Marinade

  • 1/4 cup Frank’s hot WINGS Sauce for more heat OR Frank’s ORIGINAL Hot Sauce for less heat
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper

Buffalo Glaze

  • Reserved marinade
  • 1 tablespoon honey
  • 1 1/2 teaspoons lime juice

Instructions

  1. Prepare the Marinade: Whisk together all the Buffalo Marinade ingredients in a medium bowl. Measure out 1/4 cup and add this portion to a shallow dish or freezer bag along with 2 tablespoons of olive oil.
  2. Marinate the Chicken: Add the chicken breasts to the marinade mixture and toss evenly to coat. Refrigerate and marinate for 2 hours to overnight for best flavor.
  3. Make the Buffalo Glaze: To the remaining marinade, whisk in 1 tablespoon honey and 1 1/2 teaspoons lime juice. Store the glaze in the refrigerator until ready to use.
  4. Bring Chicken to Room Temperature: Before cooking, let the marinated chicken sit at room temperature for 15-30 minutes, if time allows.
  5. Cook on Stovetop: Heat a large non-stick skillet over medium-high heat until very hot. Add the chicken and cook undisturbed for 3-5 minutes until nicely browned. Flip the chicken, cover the skillet, reduce heat to medium, and cook 5-7 more minutes until cooked through. Remove chicken and let rest 5 minutes before slicing. Brush with desired amount of glaze.
  6. Alternative Grilling Method: Preheat and grease the grill to medium heat, 375-450°F. Grill chicken undisturbed for 5-7 minutes per side until fully cooked (internal temperature 160°F). Remove, let rest 5 minutes, then brush with glaze.

Notes

  • Watch the “how to make” recipe video at the top of the post for visual guidance.
  • The chicken itself is flavorful but not very spicy without the glaze, so customize the heat by adding more or less glaze.
  • Try tossing the cooked chicken with your favorite BBQ sauce for a different flavor twist.
  • Buffalo chicken is great for sandwiches, wraps, salads, and tacos.
  • Total time does not include marinating time, which can vary greatly.
