Description

A delicious crescent breakfast ring featuring scrambled eggs with red and green bell peppers, crispy bacon, and melted cheddar cheese all wrapped in flaky crescent roll dough. Perfect for a savory breakfast or brunch that looks impressive yet is easy to prepare.

Ingredients

Scale

Egg Mixture

  • 5 large eggs
  • ½ medium red bell pepper, chopped
  • ½ medium green bell pepper, chopped
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)

Bacon and Cheese

  • 8 slices bacon, fried
  • 1 cup cheddar cheese, shredded

Dough and Garnish

  • 8 ounce crescent rolls (refrigerated, 1 can)
  • 1 large egg (for egg wash, optional)
  • Parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the crescent breakfast ring.
  2. Scramble Eggs: In a bowl, beat the 5 eggs with the chopped red and green bell peppers, salt, and pepper. Cook the mixture in a skillet until the eggs are just scrambled and softly set. Drain bacon fat from the skillet before cooking the eggs if using the same pan.
  3. Assemble the Ring: Lay out the crescent roll dough on parchment paper in a star shape. Place a slice of fried bacon on each crescent triangle. Sprinkle half of the shredded cheddar cheese around the ring on top of the crescents.
  4. Add Fillings: Spread the scrambled eggs evenly around the ring over the cheese, then top with the remaining cheese for a cheesy finish.
  5. Fold Crescents: Carefully fold the pointed ends of the crescent dough over the filling to enclose it. Optionally, brush the dough with the beaten egg wash to achieve a golden, glossy finish during baking.
  6. Bake: Transfer the parchment paper with the assembled ring onto a baking sheet. Bake in the preheated oven for 20 minutes or until the crescents are fully cooked through and golden brown on top.
  7. Garnish and Serve: Remove from oven, garnish with parsley if desired, and serve warm to enjoy the flakiest dough and melty cheese.

Notes

  • Keep the crescent dough cold until ready to use for easier handling and better structure.
  • Cook bacon and vegetables fully before assembling to prevent soggy dough.
  • Scramble eggs gently until just set to avoid overcooking; they will finish in the oven.
  • Customize with different cheeses or cooked fillings but avoid overloading to ensure even baking.
  • You can assemble the ring the night before and refrigerate it; bake fresh in the morning for best results.
  • Serve the crescent breakfast ring warm for the best texture and flavor experience.
